Salsa Chicken (Serves 6-8)
4 boneless, skinless chicken breasts, thawed
2 cups salsa (your favorite)
½ cup chopped onion (optional)
Directions:
Place chicken and salsa in the crock pot. Top with onions, if using. Cook for ~8
hours on LOW, or ~4 hours on HIGH. When cooked, shred meat with 2 forks. SO
SIMPLE!
The easiest way to use this delicious meat is to make a taco salad.
Suggested Toppings (use whichever ones you have on hand):
• Shredded lettuce
• Grated cheese
• Chopped tomatoes
• Chopped olives
• Sliced avocado
• Sautéed pepper strips
• Tortilla chips
• Sriracha sauce
• Sour cream
• Guacamole
Other Serving Options: You could simply put this meat in a tortilla with some lettuce
and cheese. You could also serve it over Spanish Rice.
